I like to give credit where credit is due… so, here goes. I was very overwhelmed one night a few weeks back and wasn’t going to have time to cook, but we had food in the house, so I didn’t want to be wasteful. I told Brennan that I would reaaaally appreciate it if he would cook that night. Keep in mind, homeboy never cooks. I mean, besides being grill master and all. So he did what all guys do when they don’t know what to do… Pinterest. I kid you not he has a Pinterest and uses it on the reg. Busted. So, he looked up healthy recipes and lemon chicken happened to pop up. He gave it a whirl.


I came home and food is on the table. I jumped for fucking joy. Although I was super happy he made food, I honestly didn’t expect it to be that great. He proved me wrong. It was SO good (props B). But, the recipe was just for the chicken so we were still hungry after we finished eating. We needed something else to go with it. Next time I cooked it, I made it with spaghetti squash and added a few more fresh ingredients and herbs to spice up the recipe.

Get ready to drool…



2 chicken breasts

2 lemons

1 medium spaghetti squash

1 white onion

Handful of spinach

Handful of basil

1 tsp. avocado oil

1 tsp. minced garlic

1 tsp. italian seasoning



Preheat oven to 400 degrees F.

Get out two pans (I use cast iron or glass) just make sure the sides are tall enough.

Cut the spaghetti squash in half (long ways), then take out the seeds and nasty middle. Then place each half facing down in about 1/4 inch of chicken broth. Bake for 30-40 minutes.

Take the remaining chicken broth and put it in the other pan. Add the juice of 1 squeezed lemon, the italian seasoning, and chicken. + pinch of salt and pepper. Also, cut a lemon in half and put them face down in the pan. Bake until chicken is fully cooked.

Next, put all of the remaining ingredients in a pan on the stove. cook until onions are translucent. Once spaghetti squash is done, use a fork to get the spaghetti squash out and place into the pan with all of the ingredients. Mix it all together. Transfer to a serving dish and top it off with fresh basil and parmesan.

Once the chicken is done, take the lemon halves and squeeze them over top of the chicken! All done!


This may sound more complex than it actually is. Its super easy, I mean Brennan could do it. Haha.
