Since yesterday was Cinco de Mayo, I figured I would make a healthy mexican meal! I threw together this mexican bowl and It was SO good. The bowl consisted of cilantro lime rice, ground chicken sausage, and guac! It seriously took me no time at all (can I get an Amen!?). Life has been crazy lately, and I haven’t been in the mood to cook at all, so easy/fast recipes are the only thing I will make. I had the leftovers today and they were just as good, making this recipe perfect for meal prepping!

WHAT YOU NEED:
1 small roma tomato (chopped small)
1 small jalapeno ( finely chopped)
1 handful cilantro (chopped small)
1/2 red onion (finely chopped)
1/2 lime (juice of)
pinch of sea salt
Cilantro lime rice:
1 bag of premade brown rice (see my laziness… I wasn’t kidding)
1 handful of cilantro
pinch of sea salt
Ground chickens sausage:
(you really can use any meat in this bowl… chicken sausage, ground beef, ground turkey, whatever you are into or have on hand!)
add a little cumin, chili powder, and paprika for more of a “mexican flavor”
WHAT TO DO:
The guac is easy peasy- just put all the ingredients into a bowl and mash up the avocados!
For the cilantro lime rice I did the same thing- I heated up the pre-made brown rice and squeezed in the lime and cilantro- done!
Lastly I browned the ground chicken on the stove top until fully cooked.
The final step is adding all of the three parts together to make the bowl! Layer in the rice, meat then guac on top! Any extra guac ingredients can be added on top to make it look more aesthetically pleasing… always have to get a good picture! Ha!
