HEALTHY CHICKEN AND RICE SOUP RECIPE

I could literally eat soup for every meal for the rest of my life and wouldn’t complain. I honestly love it so much and it kinda drives Brennan insane. He likes soup, but I pretty much want it everyday of the week… especially in the summer! Let’s just say it’s grown on him with how much I make haha! This recipe is one of my faves and is super easy (only takes about 30 mins) and lasts for a few meals- love that!

WHAT YOU NEED:

1 cooked rotisserie chicken, shredded

2 containers of chicken broth (low sodium)

1 white onion, chopped

1 stalk of celery, chopped

3 large carrots, chopped

1/2 C. – 3/4 C. brown rice (uncooked) (depending on how much rice you want!)

1 T. minced garlic

2 T. avocado oil (olive oil works too!)

2 T. McKay’s chicken broth base (so flavorful!) (can use a chicken bouillon cube if you don’t have this seasoning, but this seasoning makes it so good and will last you a year!) You may be able to get this at Kroger- My Mimi found it at her Kroger in Ohio and sent it to me, but the company is out of Ohio so I’m not sure if It’s sold in other states. If not, the link above for Amazon will do the trick!)

WHAT TO DO:

  1. In large pan put avocado oil and chopped veggies + minced garlic. Cook for 5 minutes on medium heat.
  2. Add in chicken broth, rice, chicken and McKays seasoning. Cook for 25 more minutes or until veggies and rice are soft!
  3. Yes, it was that easy! Enjoy!
