CAULIFLOWER GNOCCHI

I had heard my friends rant and rave over how good this “new Trader Joe’s find” was, although every time I would get down to Trader Joe’s they were always out of stock. It was probably 3 trips later when it was finally in stock! I was sure to grab a few bags since I didn’t know when it would be back.

First of all, I love gnocchi, but I only get it every blue moon because I try and stay away from all of the pasta. When I heard cauliflower gnocchi, I was a little suspect to be honest. I still wanted it to taste just like regular gnocchi, but without all of the carbs. To date, It’s probably one of the best TJ’s finds i’ve tried. I couldn’t even tell that it was made from cauliflower. Added bonus… less than half of the carbs.

Okay, let’s get down to the recipe! It honestly took me no more than 20 minutes, maybe even 15. Shit, idk, it was super quick. Just make this recipe and thank me later!

CAULIFLOWER GNOCCHI RECIPE:

WHAT YOU NEED:

1 package cauliflower gnocchi (Trader Joe’s)

1 cup cooked chicken sausage (we get ours from our local butcher shop)

1 yellow squash

A few sprigs of fresh basil (chopped)

1 T. minced garlic

1 T. olive oil

A pinch of pink himalayan salt/ pepper

 

WHAT TO DO:

  1. Prepare the cauliflower gnocchi per the package
  2. In a separate pan, on medium heat, cook the squash and garlic + salt/pepper.
  3. Once cooked, add the cooked chicken sausage and basil. Cook for 2-3 minutes.
  4. Stir in the cooked cauliflower gnocchi.
  5. Serve in a bowl and top with any leftover basil!
